Whole Wheat Blueberry Banana Pear Muffins

Many people cringe at the thought of Monday coming but I, on the other hand, jump up with joy on Monday mornings because it means I get to eat my new batch of baked goods for the week.

I always dedicate some time on Sunday’s to meal prep some veggies & baked goods. My usual desserts of choice include chocolate chip pear blondies, chocolate banana muffins, or my latest fave – whole wheat blueberry banana pear muffins.

Add a little bit of coconut streusel on top and you’ll be coo coo for coconuts!

This recipe has gluten and (coconut) sugar in it & I’m totally cool with it. As an “RD-to-be”, I want to break out of this gluten & sugar scare phase that we are going through. I want to show people that it’s A-OKAY to eat gluten (unless you have Celiac disease, of course) and sugar. I eat these things every day and I don’t beat myself over it. It’s called living your life.

We are not robots. We’re humans and we deserve to enjoy ourselves. If I want to have a green smoothie in the morning, followed by a gluten-y, sugar-fileld muffin afterward, then you bet I’m gonna do it.

Ingredients

  • MUFFINS:
  • 1/2 cup coconut oil
  • 1 egg
  • 1/3 cup almond milk
  • 1/2 cup sour cream
  • 1/2 cup coconut sugar
  • 2 cups whole wheat flour
  • 1 cup mashed bananas
  • 1 cup diced pear
  • 1 cup blueberries
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • STREUSEL:
  • 1 cup flour
  • 4 Tbsp coconut oil
  • 1/2 cup coconut sugar
  • GLAZE (optional - if you want to live on the wild side):
  • 1 Tbsp Almond Milk
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a mixing bowl, beat the egg, then stir in almond milk, coconut oil, sour cream, & mashed bananas.
  3. In a separate bowl, add coconut sugar, flour, salt and baking powder.
  4. Combine all ingredients together and stir until moist.
  5. Fold in blueberries and pears.
  6. Grease muffin tins or add in muffin cups, then fill each 3/4th full.
  7. Prepare streusel by combining coconut sugar, flour, and coconut oil. Use a fork of stir until crumbs form.
  8. Add streusel mixture on top of each muffin.
  9. Bake for 20-25 minutes.
  10. Remove from pan and let muffins cool.
  11. Drizzle muffins with glaze & enjoy!
