Cheaper Than Chipotle Veggie Burrito Bowl

Although it may look like I whip up gourmet meals on a daily basis, that is FAR from the truth. My typical day involves commuting back and forth to school, going to work, squeezing in a workout between those two…oh yeah and studying to top it all off.

Crazy schedules call for easy, quick recipes…while still being visually appealing, of course. I do my best to meal prep as much as possible on Sundays, but there are some days where I’m just not in the mood to cook.

One “fast-food” restaurant that gets my stamp of approval on those lazy days is Chipotle. A veggie bowl with double the guac (and yes, I know it’ll cost $1.95 extra) is my go-to.

Another lazy/busy-girl staple for me is shopping at Trader Joe’s.

Um hiiii you can purchase pretty much all da veggies already cut up! Convenience, much?!

The other day I was craving a veggie burrito bowl, but this time I wanted to make my own. This was mostly because I’m in this zone where I’m trying to save as much money as possible (#adulting), but also because it’s SO easy to make your own! Want to know the best part? Not only is it cheaper, but you can also put as much guac as you want and no one will tell you they’ll charge you more. BOOM.

I decided to do some investigating to figure out the cost of all the ingredients in my Trader Joe’s Veggie Burrito Bowl & compare it to my typical order at Chipotle.

Chipotle Veggie Bowl

Brown rice, black beans, sauteed veggies, corn, mild salsa and guac – Approximately $9.50

Asparagus saute: $3.99 (~3 servings in one pack) – $1.33/serving

Avocado’s Number Guacamole: $4.29 (~6 servings) – $.72/serving

Organic Brown Rice: $3.49 (3 bags with 2 cups each – 6 servings) – $.58/serving

Frozen Corn: $1.69 (this will last a while but lets say ~6 servings) – $.28/serving

Black Beans: $1.35 (3 servings) – $.45/serving

TOTAL: $3.36/serving

Practically one-third of the price for one veggie burrito bowl! Crazy, right?!

To make, simply heat up the brown rice on the stove for a few minutes with a bit of water. While that’s heating up, saute your veggies, corn and black beans.  Once those two are done, add all ingredients to your bowl with as much guacamole as your heart desires and viola : )

Cheaper & tastier because YOU made it. Doesn’t get any better than that!

Happy belly, happy bank account & happy hump-day friends!

  1. Great idea, and I love how you give the cost breakdown too! My daughter (15 yo) is trying to eat mostly vegetarian meals these days, and this would be a delicious easy meal she can make. P.S. Love that Trader Joe's frozen brown rice-it's a staple at our house!
