Cauliflower Buffalo “Wings”

I have been on a cooking binge lately. When I’m not studying or at work, I’m Pinterest-ing my life away, drooling over new recipes I find. Cauliflower buffalo “wings” is one that caught my eye, especially because the Super Bowl is this weekend & it’s the perfect occasion for it! Not only do these “wings” taste amazing, but they can also be vegan & gluten-free! They’re also WAY less messy than eating actual hot wings. So if you’re at your friend’s house this Sunday and don’t want your face covered in hot sauce, I suggest making this ; )

This recipe takes 45 minutes total (prep & cooking time combined), meaning there’s no excuses…you must try it!

Ingredients
1 medium head cauliflower (chopped into bite-size pieces)
1/2 cup of all-purpose flour (or gluten-free flour)
1/2 – 3/4 cup of water (or almond milk)
2 teaspoons of garlic powder
1/2 teaspoon of salt
1 tablespoon of melted ghee (or vegan butter)
2/3 cup of hot sauce

Directions
1. Preheat the oven to 450°F
2. In a medium-sized bowl, mix the flour, water/milk, garlic powder and salt together until smooth. If you prefer a thinner consistency, use 3/4 cup of water instead of 1/2 cup (totally your preference; I’ve tried both thick & thin consistency & both ways taste bomb)
3. Dunk each cauliflower into the batter and then place them on a lined baking tray
4. Place the tray in the oven for 15 minutes, tossing them halfway through
5. While your “wings” are baking, melt the ghee/butter and mix it in a bowl with the hot sauce (this mix is the buffalo sauce)
6. Take the cauliflower “wings” out of the oven after the 15 minutes are up and dunk each cauliflower in the buffalo sauce
7. Place the tray of cauliflower “wings” back in the oven to bake for another 25 minutes
8. Once the time is up, remove your tray from the heat and let them cool for a few minutes
9. Serve with any type of sauce that you like (you can mix greek yogurt with sea salt & lemon and use that…or use some type of vegan ranch…or my personal favorite – Majestic Garlic) *insert heart-eyed emoji here*.
